Mary was ten years old when she experienced her first foray into the world of hospitality. Her parents owned a milk bar and she used to help out by serving.
George also had a background in hospitality, so it was natural for them to take over the family business when Mary's parents retired in 2000, changing it into a cafe and expanding it over the years to accommodate an ever-growing crowd of loyal customers.
In December 2023, George and Mary sold their business to a new owner who continues to serve Bondi Chai.
How do you separate your personal life from your life at Aromas?
We have been able to employ some very reliable team members that are able to run the store in our absence, meaning that we’re able to enjoy our personal days without any worries.
What’s your favourite ‘me time’ thing to do?
We like to go on drives, walks, and try different cuisines.
What nice surprises have you found in running Aromas?
We have staff that we employed as teenagers 20 years ago that live all over Australia and we still feel like they are family every time they come home to visit.
What not-so-nice surprises?
Probably the biggest not-so-nice surprise was the Covid pandemic. We are very grateful to have come out the other side.
Do you have any advice for someone contemplating opening or buying a café?
Be prepared to work hard and ride a rollercoaster.
What personal touches did you put into Aromas that make it unique?
We like to bring in some of our heritage with the foods that we offer.
Do you have any funny stories?
The time we accidentally baked a cake using salt instead of sugar comes to mind...
