Both varieties of Bondi Chai make great mixers in the bar. Make a Bondi On Ice in a cocktail glass (see earlier recipe) and add a shot of your favourite spirit or liquer… eg Kahlua, Tia Maria, spiced dark rum or Cointreau.

A hot Bondi Chai Latte with a shot of liquer is also a great ‘apre ski’ or a bedtime ‘hot toddy’ – without the caffeine to keep you awake.
